I love trying new recipes. Especially easy casseroles that are even good reheated. This is one that my friend, Lynn passed down to me. I have to say it was a HIT. Sorry, no pics for this.
2 boxes Broccoli Rice Au Gratin flavored rice mix. Uncle Ben's or Rice-a-Roni brand
4 cups boneless chicken breasts, cooked and shredded
1 large bag frozen broccoli flowerets
2 cans cream of mushroom soup
2 cans of milk, or more to consistency
2 cups cheddar cheese, shredded
salt & pepper to taste
Preheat oven to 375 degrees. Prepare the chicken and set aside. In la large pot, prepare the rice mix as directed. Once the rice is done, keep the pot on a low flame and add the soup and half the milk, stirring well. Add the chicken, broccoli, and as much cheese as you think it needs. I usually add at least a cup or more. Mix well. Add more milk to bring the mixture to a pourable, casserole-like consistency. Season with salt and pepper. Pour mixture into a 9 x 13" pan and sprinkle the top with additional cheddar cheese. Bake until bubbly and the cheese is melted, but don't over bake and burn the cheese.
I tell ya...all I do is serve this, salad and rolls, and HH is singing my praises. Let me know if you try and and like it!
